From the seeds to the tara gum
The tara seeds, extracted from the pods by threshing, are sieved to remove impurities and then roasted to break the external hull, which is tough and hard, and to eliminate the germ and husk. Tara gum in the form of a split is obtained then milled with deionised water and sieved to produce commercial Tara gum in powder form.
The tara gum extracted from the endosperm is a white to yellowish, odourless powder, which is soluble in hot water and partially soluble in cold water but not in ethanol.
