Tara gum for sauces, dressings and condiments

Tara gum, Aglumix®01, is used in emulsified and non-emulsified sauces because of its ability to develop high viscosity and ensure good emulsion stability during the thermal processing (pasteurisation of bottled sauces and dressings) and maintaining shelf life of finished products.
